It really is a wonderful showcase of all that Victoria does well and we hope that people enjoy it for many years to come.”

Vinified Sommelier, Luke Campbell, who recently curated the wine list for Pearl Oyster and Chablis bar (Melbourne) has created a largely Victorian based wine list that captures some of the widely and lesser-known regions including the King Valley, Yarra Valley, Gippsland, Stathbogie Ranges, Mornington Peninsula, Beechworth and the Macedon Ranges. Some of the highlights include Oakdene Sparkling Brut NV – Geelong ; Fighting Gully Road Verdicchio – Beechworth and Dalwhinne 'Mesa' Syrah,  Pyrennes.

This wine list sits alongside a collection of unique, seasonal and finely crafted cocktails that you can experience with all the senses. Collecting only the finest selection of quality spirits, along with locally sourced syrups, shrubs and bitters some of the highlights include the Wangaratta Fingerlime Sour containing a Cucumber Infused Gin, Finger Lime Washed Triple Sec, Citrus; the Ballarat Star Martini containing a Passionfruit Wash Vodka, White Chocolate, Passionfruit Citrus, Passion Fruit Puree and Melbourne’s Gospel Toffee which contains Maple Butter Wash Rye, Paperback Smoke.

The food offering is again a nod to the exceptional Victoria produce focusing on the charcuterie scene across the state. Some of the highlights from this menu include Shepherd’s Whey indulge Goetrichum and Farmhouse Brie, Long Paddock Silver Wattle, and Milawa King River Gold all matched with wine suggestions.
